About this deal

It tasted good, except that it separated as it set, so I ended up with a dense caramelly bottom layer and a fluffy top layer. David Small, originally from Newport, struggled to find a recipe book for mostly British food with metric measurements, so started to put together his own recipes using his Ninja Foodi.

Among my large collection of cookbooks I have quite a few that are over 25 years old, and some that are older than I am. There’s still room for improvements in future editions, though: having been diagnosed as coeliac last year, I’m still trying to get my head around substitutions for a long list of ingredients I have been surprised to have robbed from my kitchen (Marmite!There are a few recipes here that became real favourites: fidget pie, made with scraps from a ham bone begged from the local butcher, rabbit in cider, steak and onions in Guinness, several recipes for offal, and, especially, chilladas – little rissoles made of lentils served with a tomato and chilli sauce (well, in my defence, it was the 70s! Unfortunately my dish was a bit big, so I couldn’t do the paper collar thing to make it look as if it had risen above the top of the dish. As an added bonus you are lending support to a nice man and his lovely wife, who both have displayed patience and courtesy in fielding the Editor’s questions about cooking soup and salmon. The hardback book is the same as what is being sold as the Kindle Print Replica version, as it fits better into the portrait-aligned Kindle. I continued the bunny theme with a “rabbit in the orchard” pie; classic flavours of rabbit, cider, mustard and cream, with apples, mushrooms, and tarragon added.

It seemed to me that sprinkling sugar on the uneven top and trying to burn it wasn’t going to work that well anyway. The pedigree of these dishes is both clear and daunting, for Markham cooked at both the Carved Angel with Joyce Molyneux and the Hole in the Wall with George Perry-Smith, two unabashed disciples of Elizabeth David. Potato has 34 pages listed, but doesn't split them by what type - chips, wedges, mashed or as an ingredient in a dish (for example - soup). Pork Chops is listed twice in the index - one with one entry and the other with three (which has the same page listed as the single entry).

It’s bitty, parts of it cobbled together from a number of previously published articles, and not very coherent as a result. I picked up the Ninja Foodi, knowing that I could cook well with it and quickly, eat and be back to work before the boss noticed that I was offline. Some of David's recipes include a full English breakfast, Irish beef stew, Lancashire veggie hotpot, and sticky beef and broccoli. If you’re using a stainless steel pan, you’ll start to see the dough leaving a film on the surface of the pan. After days gathered around what surely must have been an immaculately crafted solid oak table, bathed in natural light pouring in from floor to ceiling windows and set in the middle of a minimalist, yet tasteful, room of bare concrete walls, they emerged with The New Nordic Food Manifesto.
